Piera Pasta Fresca is a pasta business supplying Fresh Pasta to restaurants and individuals all around Melbourne, Australia. The founders Gabriel and Piera aim to share their Bolognese roots with the Australian community, through their love of Pasta.

Piera is an authentic “sfoglina”. The sfoglina is a very particular professional figure originated from the gastronomic tradition of Bologna, chief town of Emilia-Romagna. Its name comes from the “sfoglia” - the fresh pasta sheet - and Bologna is the city where this art was born and where the “sfoglinas” have been present in every household for centuries.

The porticos
One of the things that strike the most about Bologna is the high number of porticos that extend from almost every building.
These attractive arches were originally built from wood in the late Middle Ages to create extra living space and now have the advantage of offering protection from the rain and sun as you walk around the city. Bologna is home to the longest portico in the world at nearly 4km. It starts just outside the city walls and extends up the hill to Santuario della Madonna di San Luca.
The signs
Walking through those arcades you will find fresh pasta shops, bakeries and restaurants (trattorie) with their beautiful signs of the early 19th century.
The Tagliatelle
Tagliatelle is one of the most popular and delicious pasta shapes in Italian cuisine. They are the most famous and typical  Bologna dish, and they are normally served with the ragù sauce.
